This one I solved easily, you expect everyone to be attacking and thus looking at the boss, so you take yourself to the back of the arena. This is what myself and the other person in my group last night did, they just made the mistake of having me in their sight arc and got themselves petrified.

I've heard people posit that the point is to give players an intense experience that feels clutch, and that sounds about right to me. And personally, I think it's an interesting way to make design a mechanic: if someone who can rez survives, the group beat the mechanic. (And I wouldn't be surprised if there's some smoke-and-mirrors happening in the background that nudges things towards that outcome...)

I wouldn't want every single mechanic to be designed like this, but I think it's a nice bit of variety that has a fun vibe.

I was near the edge of the arena and I was healing.

That's why I clearly saw them flying off when the eye mechanic went off.

When I saw the eye popping, and noticed it was small and lower than it should be, I realized what was going to happen and stood still, but I couldn't even see where I was, and clearly, neither could they.

Just queue as healer. They don't get a spread nor accel-bomb so you don't have to worry about dying so much.

I am worse at doing them in normal mode than Ex.

The mechanic is fine, I think more people just need to learn to go behind the party if they get the eyeball. I died my first few times doing the mechanic, but learned if you press sprint it's not too bad.
