FFXI songs:
Ragnarok
Distant Worlds
Depths of the Soul
Onslaught
Mercenary's Delight
Warriors of the Crystal
Distant Worlds is definitely my favorite. I still remember on that fateful day almost 5 years ago when I beat Chains of Promathia and witnessed the 'final' scene with Prishe, Ulmia, Tenzen, Louverant, and everyone else who participated in that struggle.
The scene warmed my heart and soul, but forever left me heartbroken that I'd never go on such an adventure ever again.
FFXI always had that magical feeling for me. :(

Probably Ragnarok for FFXI and for FFXIV... either the Kobold stronghold theme, Track 26, or 72... or... nope, no way I can decide that.

From XI, I'd say:
Faded Memories - Promyvion
The Sanctuary of Zi'Tah
Ragnarok
And three that I'm surprised no one's mentioned yet:
Gifts of Paradise - The Garden of Ru'Hmet
The Cosmic Wheel (This is probably my single favorite)
Currents of Time (This was hard to find online!)
In XIV, I'd go with Coerthas, Mor Dhona, and that guildleve music that plays in Coerthas.
Maybe it's the nostalgia, and I'm a huge fan of Uematsu, but in my opinion the music in XI was far and away better than XIV. I chalk that up to, as I've said in previous threads, the fact that SE didn't take the time to properly mix and master the soundtrack before releasing the game (the music we hear is exactly the same as it was in alpha).

Oh, and this version of "Answers" which can only be heard in this trailer.
