Oh yes most of them remained in a somewhat fixed position haha but what I meant was if they just auto attacked and afk'ed people would wipe >< FFXI bosses could not be defeated by simply standing there auto attacking and doing nothing else. About the graphics, it use the Unreal Engine. For me it have better graphic that the current FFXIV.
Keep looking and the next videos. On that dungeon there are 4 NM or BAMs like they call them there, every NM have a something in particular to learn and exploit in order to win the fight. May seems easy looking on the video but i can tell you that is hard enough to kill the tank in 3 normal blows or 1 skill if he didn't block it or evade it.
Anyway, i like both games, they are different in a lot of ways so its not fair to compare then directly. I think the same as the OP. The NM fight since ifrit turned all about on adds and controlling then, i would like more NM that need a real strategy more that kill those first as fast as you can and go to the next mob. -

Some of those boss fights' adds aren't really adds.
Coincounter, they don't even attack you.
The skeles at Batrall can be killed one by one, especially with spike damage from drg/mnk.
Ghosts at ogre can be ignored. They just make you watch your footing in battle.
As for Moogle and Garuda, this content makes you act as a party. Garuda needs constant dps so she doesn't take down pillars. Have a mnk focus on her while your AoE party members worry about the "adds" floating around. The two mirror images of her? They each have a separate weakness, so it's not AoE spam fest. Moogle? Kiting is what it's all about but don't make it sound so easy. Still people are failing at it.
I don't think all the content is AoE centric. I think your just pigeonholing certain content and throwing in old content with it. -

With boss fights I'm sure they will mix it up a bit over time. At least I hope so. They are well aware of all the BLM stacking so we will see how that comes to light over time. I do have to agree with him about xp parties though. They are horrendous in my opinion. Not fun at all for me. I can barely stand to level my remaining DoW/DoM jobs. It seems to me to be a no skill hackfest. Half the time I don't even really know what's happening aside from pick a mob and hack away. The most difficult thing about xp parties is targeting the mob you want to attack. Either that or staying awake. lol that sucks. I don't want a grind fest, but I would love something engaging and entertaining that at least requires some skill. This link and add system is not my cup of tea.
