She just wears whatever she feels in the mood for. She is a black mage now so I think she just feels like black clothes match it.

she looks more of a witch than goth. Goth looks disturbing dumb. imo :)
She has knowledge of the dark arts now and she makes good use of her black magic in battle. I assume she is merely dressing the part as the black mage she is. How she dresses per say square enix wanted her powers to reflect on her appearance so she wears all black because she uses black magic. It would be kinda odd if she wore white and is classed as a black mage
Yes of course
Hmm.. I'd say you could make an argument if you just look at her ShB outfit but she doesn't feel goth at all personality wise, and I tend to think of the two as both being needed for something to be considered goth. But that's just my take, I'm not sure if there is some sort of "official" definition.
Y'shtola is & isn't goth.
She is merely taken to the role of dark temptress witch/ student of the arcane. I say temptress because there is an aspect of mystery & allurer that goes hand in hand with the character type.

Y'shtola cares wayyyy too much to be goth
Y'shtola can't be considered Goth, compared her with like.... Lulu from FF10, Lulu is more goth than Y'shtola, belts, heavy makeup and stuff. Anyway, its hard to describe what is and what is not considered goth. There is many types of clothing in that category.
