Monk - It really hurts my finger playing this class with all the moving. Also, I don't really feel the class growing post-lv50. Same old GCD, even in visual (most classes have visual upgrade for their GCD at higher level), with more ogcd.
Ninja - At lv80, its opening become super busy. I still like the class from lv1-70 cuz it can quickly burst down enemies, which is cool to do quests with, and I usually queue it for lv70 or less dungeons.
Summoner - Ninja is busy at the beginning, while Summoner is busy all of the time if I try to maximize DPS output. If I play without caring about optimal rotation, it is an enjoyable class, though. I hope the change in EW makes it nicer to play.
Bard - I like this class when fighting bosses. When fighting trash however, I hate the idea of apply DoT for songs, then have to reapply it when your current target dies. Why not allowing Bard to spread DoT at lesser potency like Summoner? Also, some other things about this class bugs me, like Pitch Perfect deals zero AoE, no AoE version of Straight Arrow. The worst offender is that the SFX is very tame and un-impactful, despite the VFX is very flashy, make the class not very satisfying to play sound-wise.
Dark Knight - outside of what people usually told about DRK being a Warrior-lite, I hate Bloodspiller's animation. It feels really dumb, seeing your character spinning a sword then let it drops with gravity. Why just not a simple powerful and true slash? Also your sweet shadow takes too long of the time to make his entrance. I know his duration covers his entrance time, but how about shorter duration but instant dynamic entrance and do the damage immediately?
Scholar - aside from usual Scholar meme, it toolkit feels weird to use. Like the ogcd that makes your gcd barrier heal a pure heal, why just not make a powerful gcd heal with 15s cooldown? Same with the "spread your single-target barrier to your ally" skill, why not just make a long-cooldown 400-potency barrier? The aetherflow feels weird too, cuz it encourages you dump resources every one minute, but unlike WHM's blood lily, its resource dumping skill is very weak. I guess these skills make more sense in hardcore raiding, which I don't touch, but for casual players like me, they feel complicated for no reason.
DNC... I just can't get behind the class fantasy. I am sure it has a nice and fitting lore, SCH for instance actually surprised me how good the story was, but I tend to enjoy my main in games to have the classic "heroic looking" classes.
This is going to sound ridiculous but...the fact BRD's Heavy and Straight Shots [and their upgrades, I think?] are instant cast, but the animation lasting for the whole gcd as if it were a cast bar tends to confuse the f- out of me, so I end up clipping...a lot
If it's just about not maining and not playing at all, Machinist and Bard. I refuse to hinder any group with suboptimal play which isn't in my control, especially thanks to latency issues unfixed within the game.
Healers : i don't like healing even with sage being the coolest healer ever i'm just not going to main that role.
Blm: Again it looks really cool but i'm not into being a turret.
Monk: i'm not a fan of positionnals and there's a LOT of them here.
Ninja: i like to play it sometimes but i always feel like i'm not good enough on extreme or savage.
Drk: it's getting boring (i played it a LOT and it's not changing).
Until Endwalker launches I absolutely refuse to touch Summoner given the utter state the job is in. After it launches it'll be my main class for my main character and a few of my alts though.
All DPS-jobs in general,
Mainly I am more support & sustainability rather than deliver raw DPS damage.
I did tried couple of them but never enticed me to enroll for that role.

BRD is boring. The "songs" aren't interesting and don't give me the sense of playing music.
It is 99% an archer 1% lipservice to the music aspect. Should not even be called BRD.
It is the first victim of the devs not knowing the game would not support hybridized classes. Something like BRD could have worked well in 1.0, not in 2.0.
MCH because it just feels so empty to me. Hotbar are barren, it's just spammy with the occasional satisfying megacrit and that's it.
MNK because the class fantasy, aesthetics and the constant hopping around just isn't for me. I can't get behind it and I don't enjoy the play style at all.
WAR for similar reason. I dislike the class fantasy, the animations, the aesthetics and the playstyle. I feel like a single brain cell mountain troll playing it. ME HAVE BIG AXE ME SMAAASH.
I could get behind all the other classes enough to main them for a while and I've played plenty of classes regularly including in endgame content but those 3 are a huge no go for me.
