The grating aspect of the music is very likely intentional. Given the dialog in the intro trailer, it seems like the Sharlyan council has in mind to survive the final days, perhaps using Labrynthos as their doomsday bunker. That itself gives Labyrinthos a nefarious and unsettling vibe.

The music is intended to be bizzare and unnatural because everything about Labyrinthos is. It's a mechanical environment underground which may or may not be a shelter from the world ending above. It's kinda like how the Arboretum HM music sounds like it's a dead mall playing music from speakers.

I'm pretty sure it's intentionally supposed to be that way. It is something that my ears will need to nope out of before long if that's how it sounds in game, but I can appreciate how spot-on they are with setting the environment.
