I enjoy the game and hours of /pointing at a fellow fc mate.
It used to be friends, but since those don't exist anymore, all the stuff I have yet to accomplish in it.
The activities I enjoy, I enjoy by process of intrinsic motivation, rather than extrinsic. If it's not fun, it is hard to talk me into doing it. So, for example, unless playing with friends you couldn't get me to sell my soul for the MSQ roulette. None of that is intended to be fun and the solution being to watch YouTube or check your IMs or something to pass the time is a no go. That's lame.
On the other hand, I enjoy PvP a lot so I can log on for a few games to take a break from work. That is how I got a lot of my jobs to 80; figure if I am going to go PvP, may as well get the XP on something I don't plan to play and get a free mount out of it. I also enjoy the housing stuff more than a lot of games dedicated to it. Nothing is ever really done; I've changed my medium around a lot and take projects to deco for others all the time. Also Gold Saucer is fun in moderation. Lastly, even if all my stuff is 80 and I have all the equipment I could want (I only prioritize gearing WAR), I do a normal raid or something every day just to keep my skills sharp and genuinely enjoy it. Playing with friends is fun, too.
Though like, I also couldn't do the thing where people play for 5 or even 10+ hrs a day. So many books I want to read, games I want to play, art stuff I want to do, skills I want to learn... I imagine the game is still fun for me because I have avoided burnout. If it's not fun I just do something else. I log onto FFXIV if I want a specific experience it can provide.
It's a weird psychology people get where they feel handcuffed to an MMO when we are in an era where you can get thousands of works that are 100% free to read or watch translated in your language but they rather stare at FFXIV asking what they can do next.
from technical standpoint, FF14 is one of the mmorpg that i can play with 100ish latency (the others is BDO, archeage, etc but i have zero interest in that game)
FF14 and PSO2 is currently my mmorpg that i can enjoy right now, and i love the stark contrast between these 2, FF14 is casual and slow pacing game when it come to combat, while PSO2 is also casual but the battle is fast paced and action oriented.
and both game are very weeb so its basically in my realm lol
I'm in a similiar position like you.
My self set goal right now is to level up my trusts to level 80 and after that I will probably go back and work on my squadron. Never did much with them ever since I go them to max level.
I also set myself to only do 1-2 dungeons / 1-1.5 hours a day at max (if I play at all) to not brun out.
Arcanist Summoner Scholar and their lore keeps me in the game. They are doing a terrible job lately though TT
Well I do take a lot more breaks than I did in the past. (ARR + HW I dont think I took one..especially since I wanted the veteran rewards..) Inbetween the breaks I have made me a list of doing the old relics (minus Eureka) and I also like to craft most of the stuff at least once.
Right now I am doing at least every FC workshop item once..finished with the airships and now I am doing the houses..which has given me a huge list of insane amounts of mats to gather (why I am doing that again?). For example 21k iron ore..I probably wont be finished until the next patch drops.
Other stuff I am going to do afterwards: Crafting new recipes, maybe finally doing more PotD runs and doing the relics..
Honestly if there wasnt these self imposed goals I would probably take even more breaks (sadly I do own houses so I cant take too much). Doing a lot of the achievement stuff isnt fun (and I still will reach 13k points soon) and a lot of them are over the top grindy..A friend of mine is doing the Ishgard stuff right now and the amount of rages from him..
@Edit: But the only reason I am able to do this: I watch a lot of stuff next to it. Which is at least a great way to combine things..because with other games I play them fully but I also have a long list of lets plays to finish..so with FF14 I do both. So its not a complete waste just gathering stuff for hours.

A mix of habit, friends and stuff thats yet to be accomplished.
One of the things I enjoy most is that FFXIV is a game I know pretty well by now - which makes it perfect for times when I'm not feeling like I have it in me to actually get into a new game (because I'm to tired, short on time, just not in the right mood...). And there are usually a couple of those moments each week.
I used to play a lot more, but dont have as much as I want to accomplish anymore left - there are still a few grinds left, though. So whenever I need a break from work etc. I'll hop into FFXIV, turn on a podcast and do some Ishgard expert crafts for half an hour. Or my partner and I will run the occassional roulette on an evening when we cant quite make up our minds about what we actually want to do. Or I'll do some mentor roulettes or try some PvP...
In short: FFXIV is so familiar that I can just jump in for 30 minutes, do something and log off again - or, if I have more time, there are quite a few things that can keep me busy for hours (on top of Savage raiding with our casual static twice a week). I suppose what keeps me playing is, in a sense, a feeling of "home"? Its relaxing to jump into a game where I know the ins and outs like the back of my hand, dont need to read tutorials or learn new stuff.
On broader terms: The story, mainly - though I dont count that for the times between patches, since I could just resub with every new story-patch aswell...
