It is definitely faster to farm fates for bicolor gemstones and then buy skins than to farm individual mobs for skins. Also it's already been said but I want to reiterate it, if you have a battle class retainer definitely use them to go out and get skins for you. It helps ALOT.

Yeah, the Bi-Color Gemstones are new to ShB. They didn't exist back in Stormblood. Basically, get gold in a FATE, you get 12 stones. One skin = 2 stones. So 6 skins per FATE and the FATEs usually don't take that long. An hour or so and you can buy a bunch of skins easy.
It's also how you get the riding maps (70 stones each) for each zone, but you need to do 6 FATEs in a zone before you can buy the map from there IIRC.
