Warrior's quite a good choice, they have one of the lowest APM, good mitigation and it's a very easy class to play. Being a tank, in any content below Savage you can easily eat an avoidable mechanic or two and shrug it off.

Yeah, I gotta agree with the people saying *not* BRD. It's my favorite class, always has been, but it is definitely not slow. I don't have a physical disability like that, but my hands do cramp up and I do have issues with hand/wrist pain - and when I was raiding savage back in HW, playing BRD well killed my hands.
Throwing my vote in with BLM, WAR, and maybe RDM and WHM. WAR and BLM in particular feel slowest to me, though I do only have them at 50/60 right now. RDM and WHM are just... fairly easy to play, imo. Can't speak to whether SCH would be better for a healer since I don't enjoy it and generally avoid playing it. :p
Warrior,Paladin,White mage,Scholar and Black mage are definitely safe bets
bard is a bit too crazy sometimes i wouldn't recommend it for someone who wants a more slower game play
Warrior is really easy on your hands. Barely any oGCDs to press, comparatively speaking. Would definitely recommend it alongside WHM.
I know somebody who plays that has arthiritis, she avoids healers and tanks for that reason, because they might require her to be quick to react. Though overall, yes, some have low APM. WHM or SCH for healer is fine and WAR or PLD for tank is also fine.
For DPS, some of them can be on the fiddly side. But if you#re playing casually then I'd argue that you don't have to be playing optimally. I'd agree with Black Mage because it is one of the slowest, because their philosophy is to strike hard. RDM is quicker than BLM with it chaining spells, but still slower paced than most other DPS. If you fancied melee, I'd agree with SAM, although you later learn oGCD's but you can weave, you don't have to be weaving them optimally...or at all...I am guilty of forgetting them when I was levelling SAM. For physical ranged, all three rely more on weaving oGCD's, whilst BRD less so, once you get it to a certain level it becomes more so.
Warrior is a good suggestion, you'll need to move more than a healer but if you can get into the habit of moving with the mouse via holding right click to turn and both to run you can really cut down the work load on your keyboard hand.
I'm going to nay say the SCH suggestion somewhat though. At the level cap a well played SCH's APM is 15-20% higher than a WHM. Not to mention that it's a *LOT* more reliant on it's greater number of cooldowns. The key benefit that I think people have in mind with SCH is that you can practically afk your way through low level content, especially once you overgear it. That really isn't the case in later levelling dungeons especially with large pulls. WHM has an easier time of it to a very noticeable degree.
Bard is a strange suggestion. Any proc based job that's built around weaving in oGCDs is going to be a bad time for you regardless of movement or rotational simplicity imho.
Casters are going to be your best bet, but generally speaking across all roles you'll want to look into jobs that have the fewest buttons to push. From the jobs I play, those would be WHM and SAM. I love these two jobs because they are very straight forward and both have an modest amount of situational skills that you won't be pressing in each rotation. I should mention that I play on controller, but that shouldn't have much bearing on the overall buttons these jobs utilize.

Get in to a big FC. A place where people will group up with you on any of the bigger runs, keeping you out of PF. The button mashing is less class specific, more dungeon specific. Some dungeons just take a really long time and push you, no matter what class you are playing. Crown of the Immaculate is going to push your limits. It's a lot of button mashing. It's just one of those dungeons. In their own right Praetorium and Castrum Meridianum are too but you might end up being one of the few people who enjoy the Main story Roulette as the cut scenes break that down. You can get most off classes to 80 on that roulette alone, given enough time.
All classes can have moments of button spam for their burst windows but generally I find War, Sam and Rdm to be fairly forgiving and easy to play.
With War, unless you mistime your CDs for a tank buster it won't really punish you for mistakes. Clicking a wrong button during Inner Release will just give you less dps than screw up anything and their rotation is fairly simple.
Rdm can have more complexity to it, especially if you try to squeeze out all the dps you can, but thanks to its cure and raise its good for solo/duo play. Just playing it casually the DPS is ok and you can recover from most mistakes by healing yourself. Most of the faster button clicks will be in using your ogcds to boost your dps in your burst.
Sam is a strong dps class but its rotation won't make you feel like you're turning your fingers into knots. Skipping something in your rotation will set back your dps but its easy to recover and keep going. A lot of the extra buttons here are using your Sen and kenki but its not an extreme amount of extra clicks.
Most classes will be this way; if you don't care about getting the best DPS out of it then you can skip some of the oGCDs and simplify your rotation to the level you're comfortable with. Also, most classes can be fairly forgiving of mistakes; Mch is one of the few that aren't forgiving and healers can lead to a party wipe if they don't get their heals right so you might want to avoid those. If you aren't in Extreme/Savage content though, few people will care if you're not playing optimally.
I'm sorry for your injury and I wish I could give better advise but a lot of it will just come down to play with it and feel whats comfortable.
Honestly if you aren’t planning on doing end game high end raids I wouldn’t really worry too much about it. The being said BLM or SAM would be a great pick for DPS. SAM does have positionals(not fast button pressing but quickly moving around the mob) but it’s less punishing for missing them then say MNK or DRG.
I main PLD and I have a disability(I have Autism Spectrum disorder and ADHD so in regards to the game it mostly effects my hand eye coordination) and I don’t do end game savage raiding myself and things go great. Most dungeon pulling involves grouping up mobs and aoeing(two button combo) them down while popping the occasional cool down, later on you get a magic aoe called Holy Circle but that’s very straight forward once you get to that lvl.
Boss fights aren’t too bad you reduce damage by popping cool downs but it’s not going to be as punishing as say missing a cool down in a savage raid.
