I wouldn't be too surprised if we ended up seeing Ultimecia, Kuja or Kefka next.
Anything is possible, but i dont think this is terribly likely. I would need to go back and rewatch some scenes/reread some dialogue, but my interpretation was that Omega couldnt understand what it was about a hero that made them capable of overcoming the odds to beat the villians they clearly should have lost to. And if Omega cant understand what makes something strong, it probly cant recreate it accurately enough for its purposes. So we get to "play hero" and Omega gets to do a science experiment.
FFVIII, Ultemica Castle, either facing off against bosses in there, or iconic bosses in the game like Jumbo Cactuar, Metallic Cactuar and Tonberry King.

Nah the final boss is that cute chocobo, it's far too cute to not be evil.
If they DO bring in Greg, I hope it's an actual guest appearance by the Gilgamesh already in the game, rather than a "copy" created by Omega. It could add a bit of humor for Omega to rope the guy in to its shenanigans.
In fact, Haukke Halicarnassus got her name in essentially the way Shinryu did: people saw her, and named her after a creature from their legends.
I'd have a little doubt they knew at that time while making Haukke HM that Hali would be re-introduced as a boss in it's current version. The Hali in Omega shares abilities of the original FFV Hali (critical hit, ribbit, holy) whereas the Haukke version does not. So we can at least conclude that the Hali in Haukke is not a reference to the FFV Hali except for perhaps being drawn from the void (and thus people naming after "void" legends).
