Thanks for the constructive criticisms most of you i appreciate the ones that didn't just say try a new job cas well I feel that's a given and I am just available roles in my server are tight and since most people want melee dps more I get stuck in that roll alot cas we have an over abundance of caster dps and again thanks for the criticism

One thing I've done to keep from getting too bored is to keep a second job leveled and decently geared so I always have the option to play something else.
My main is healer, but my Summoner is always outfitted with every nice caster gear piece I grab from dungeons or with tomes after I've got my WHM finished. I've also popped back and forth between WHM and AST to keep it fresh.
Most players do this just to aid with running what roles are needed for friends, but I go through phases where I really just want to play DPS, despite always being tapped as healer.

One thing I do, is I never do any particular thing for an extended period of time. If I took any job from 1-60 without some breaks here and there, I would be burned out playing it. If I just sat an crafted everyday for weeks, I would get burned out. If I grind the MSQ day after day, I will get burned out. It's important for me to mix things up throughout the week, and even throughout the day.
I never let anyone's expectations dictate what I want to do, or how I want to play. However, I was also blessed with a very supportive FC that doesn't put any pressure on me to run content. I am also not in a hurry for anything. Some days, I don't do anything at all. Just kind of roam around aimlessly while taking in the game's beauty because that is what I am enjoying at the current moment.
So that is my advice. You don't necessarily have to stop playing MNK, or try another class, but do try giving your fists a break until you find yourself missing beating mobs to death. New gear also gets me motivated to queue up for content, so increasing your average iLv is another thing you can work on.

I'm of a niche variety it seems but I don't just level a new class, I make an entirely new character for every Job that I play so I have a fresh face and aesthetic for each role that I play - plus it means I have a far higher ceiling when it comes to weekly goals should I have the time, inspiration and interest in gearing 2+ characters through weekly tomes. I haven't even touched all of the jobs but because I juggle a number of them at any one time, it helps keep the pacing from feeling too repetitive and monotonous for me since I will go through cycles where the prospect of playing and gearing one Job seems a lot more interesting than another.

You could try playing the field. Take a month break from FFXIV and play some other games for a while. There are some fun games out there that are free to play thus you're not loosing anything by just playing them. There are also buy to play games that require only a 1 time investment just like any normal game (thinking of GW2 here) that could be there whenever you feel like playing them.
I never understood why people subject themselves to playing games they start to get bored of. Perhaps in the olden days of MMOs but there are too many options for MMOs or just games in general to need to enter holy matrimony with just one game.
Tera has an interesting combat style.
Wildstar has a fast paced and fun combat system and a unique setting.
Knights of the Old Republic has a great story (at least to start, I never got to end game)
Guild Wars 2 is tough to learn but satisfying once you get the hang of it and has great racial character options.
Blade and Soul is likely the most skill-based combat system you'll encounter in a free-to-play MMO. Standard content can feel challenging for newcomers.
ArchAge, Elderscrolls, Black Desert...the list goes on.
If you have a group of friends that like to branch out and try something new every now and then, will make exploring all the better.
