Well she asked us which server has the most/more. It's Gilgamesh and Balmung.
Balmung has been closed for a year if not more, Gilga I seen open once in a year.
I'm on Balmung but I would recommend Leviathan though, I liked the folks there
and it was pretty populated back in 2.0...Dunno since then.
Returning was riddled with RMT's spammers...at least you're safe in these
bursting servers.

The most populated seems to be Balmung,Gilgamesh, Leviathan or even Ultros ( I wonder why people never mention that server?) I want to give you a example for my point of view from Gilgamesh,Balmung. Remember it's only from my own experience. When I was just a young Miqo'te leveling on Gilgamesh I had random people often stop me and trade me food/pets. Or just a friendly emote wave. Sit in Limsa long enough and random Lala's come by and sit in your lap or just random people again emote you. ( Its how I've made a lot of my friends from random encounters) So to me.. Gilgamesh feels like one of the Southern states where everyone smiles or speaks saying hello. (Granted we have SOME asshat elitists)

When I was leveling on Balmung - Still leveling on it by the way. No one has really spoken to me. There is people everywhere almost in each zone. But still I don't get random tells/ random emotes or what not. There is a lot of people but they seem to stick to theirselves or just to the group of people they are with ( I say group of people cause everywhere in Eorzea you witness some form of RP on Balmung which I think is great.) So Balmung reminds me of New York.. lol Lively,active,crowded but everyone sticks to their own. Again this is only my opinion I'm sure other's might have different experiences they can share. Or even from other servers!

If you want a server that is active at noon EST (I looked at your post time) it may be worth looking at an EU or JP server since midnight JP would be the same time and like 4-5PM on an EU one. Granted this may not really work out but it's just a thought.

Definitely not my server, I would try gilgamesh and balmung, both are heavily populated but I'm not exactly sure which of those 2 is the bigger one.

If you care about economy you will have more fun on larger servers where things actually sell.

I've been on Gilgamesh since forever.

However, im not sure if you still have to wait until 4 am to create a character in that server to get in

i might try to get on Gilgamesh and Leviathan and play there for a little and see if im willing to transfer to it

I've never regretted rolling there. Well, i came there with an existing guild from another game.

I'm very happy with the server. You always run into a lot of folks no matter the time of day

Well, when the original poster asks specifically for the servers with the most people, then Balmung and Gilgamesh is the correct answer.

i like Brynhildr a lot but sometimes the world seems kinda empty so i just want to try a different 1 that as somewhat to a amount of decent people on at all times

Gilgamesh can be gotten on, especially now that the login promotion is done.. If you look on the launcher about closed server, it will tell you the times that they update the list. I manged to get my newest character created at 6 AM CST, right before heading out to work.
