But yeah, as other's have said realistically the devs just have not planned that far in yet and would like room to make additions once they get to that point. But when it comes to in-game lore then I'd imagine the Garleans have a rough map of the lands they've occupied + the Eorzean map. Most likely the Allagans have a complete world map since they conquered it all.
It's the texture file that's wrapped around the planet as seen from the moon, however we know we can't trust it 100%. Also keep in mind that it's about 50% of the planet's surface - the side of the orb visible from the moon (which is mostly obscured by clouds and shadows). The other half of the planet (which I presume is Othard, a lot of ocean, and probably more islands) is terra incognita (but probably looks a bit like Asia). I tried to label it a while back:
Looking back on it now, that probably is Meracydia and the New World, probably is not Sharlayan, and still might be Thavnair. But, again, devs have commented that this might be laid out right-ish, but might not be 100% trustworthy. For starters, look at Vylbrand on the texture file; it (and Aldenard) were clearly traced directly from the Ironheart map, down to the smoke of Mount O'Ghomoro ... except the shape of the smoke appears to have been colored the same color as the landmasses, as if they were islands off the northern coast. How close are the coastlines of other continents? Time will tell! Ilsabard seems roughly as-intended, at least.
New World = Ivalice :)
While I know that comment was probably just wishful thinking, Dalmasca (and possbily Rabanastre) is somewhere on Othard, as per this interview with Koji Fox. That makes Doma's home continent a likely source of further Ivalice shoutouts, should we ever go there. Although, considering the Doma of FFVI wasn't especially Japan-inspired, I imagine any locations that use names from FFXII will be an in-name-only sorta deal.
As for the New World...all we really know about it is that the Mamool Ja come from there. I'm actually surprised the Garleans don't have a presence there, now that I think about it; I wonder what's stopping them from circling around from Eastern Othard? Military spread too thin across their other two continents, maybe?
Well, reading that article Ferne seemed to be talking somewhat tongue-in-cheek, so I'm liable to not fully regard that as 'canon'.... yet! (please prove me wrong!).
And even if it was canon, it would still be just like Costa del Sol, Gold Saucer and the Crystal Tower all just being references in name only and not the actual places from their respective FF games - the development team all but shouted this a long time ago during a Letter From the Producer LIVE that Hydaelyn is it's own unique, independent world that is not connected to any other FF world, although it has places that are name references to other FF games for fanservice:

Probably. As I recall most of the Garlean troops you run into in Eorzea are actually conscripts from Ala Mhigo and other imperial conquests. Given that most of those conquests are fairly recent, and thus unlikely to be very loyal to the Empire they can't really afford to spread themselves too thin or they'll start seeing multiple rebellions. Not to mention the logistics of sending an army that far.
