all the examples of the latter are before the introduction of specialization; with the few exception of pre mats and workshop mats.

I'm in a similar dilemma - finished levelling all the crafting classes to 60 the very day of the live letter. I'm capping red scrips every week but I haven't spent any of the tokens nor upgraded any gear beyond the Chimerical Felt/Serpentskin/Adamantite stuff.
They did say the old gear is going to be needed to craft the new gear, but that's probably only true if you are a LTW or WVR and definitely won't be true if you are an ARM, ALC or CUL. Even materia are better off sold since some new way of obtaining them will be coming soon...
Honestly this sucks. Waiting two months to continue progress as a crafter is miserable and buying class-specific gear now that's just going to become unnecessary soon or is for classes I don't even intend to specialise in (I don't plan to be either WVR or LTW specialist) feels like an unconscionable waste of resources.
why ppl are expect that the new gear will be better than the old one?
maybe the new gear just for glamour or just lower or even same gear lvl.
maybe just use items which easier to get :3
i mean the new gear right side ilvl 180 just release it would be stupid do release already the next step of higher lvl gear so soonish.
or did i miss some clear details?

New gear that is not an upgrade would prevent them from putting in recipes that have higher stat requirements. We are nearly topped out with penta-melded i170, as it is, and are able to only exceed the 3 star stat requirements by a small, minor amount.
Either the new gear is 3 star stuff that is a clear upgrade to the i170/i180 (assuming same degree of melding) OR they are going to give us another new set of crafting/gathering gear when they come out with 4 star recipes.
