I've read this article a while ago. It's about the hunt bills, but in the last paragraph, there are some explanations about Eorzean writing and literacy, and that there are basically no fixed spelling rules in Eorzea. Maybe that's the case here, too, at least in part?

Eorzean might not even have standardized spellings, which was the case for the English language until about the 18th century. So before that people just spelled words however they felt like.

People are putting up a lot of good replies, but from my knowledge I do not think that there's any word in the game that's spelled in Eorzean that wasn't one-for-one with the english word. If there's another instance then please let me know.

Long ago there were two guys compiling words for an early dictionary they argued over the spelling of a lot of English words. The most common was how to spell and pronounce "is". One said it was "iz" and the other said "is". I forget how they came to an agreement but part of the idea was to provide uniformity and defined meaning to the written language in the early days of print. Especially if the word originated from a foreign dialect. It could just be an obsolete form of that word or based on a particular dialect. Like trying to spell a word in pig latin. without knowing how its actually spelt/said in pig latin.
