The quests are messed up, I'll admit.
But it must suck to have GSM be the best class for desynthesis and have the widest marketability for the entirety of 2.0 and have it be a little different now, eh? Goldsmith still does plenty. It's fine. Hopefully this time you won't be penalized for not specializing in it, like you were penalized for not doing Goldsmith desynthesis before.

As a goldsmith myself, it's still viable. I think the market prices are more to do with how easily obtained a lot of items are now as quest rewards between 52-60. There's still some nice unique recipes in the master goldsmith book which is obtainable at level 56+.
Craft recipes atm r kinda wtf cuz with all the free hq handout gear from the main story, the majority of recipes for some crafts lost its value. I.e wvr, ltw, bsm, gsm etc
The 1 star crafted dow / dom gear is kinda sub par to law i180 gear as there is no supply of V materia. The stat caps probs require V materia to reach it.
Gsm is alright cuz tbh u'll make more gil selling the lower items than the stuff u get in masterbooks xD.
As I was going through the level 53 and 55 goldsmith quests today, I noticed something out of the ordinary...
While all the other crafters need to provide HQ items (at least as far as I can recall), these two quests allow you to go with NQ items.
Which suddenly makes the quests a lot easier.
For the mogpoms needed for the potion needed to make the level 53 quest item, I think it's odd that it would require a goblin jig (level 58), when the fishing hole is level 54, and there is no other fish there...
I know the popular sites list goblin jig as required, but I can't find out if anyone actually tried all other baits...
As for gear/accessories from GSM and other crafters...
While the MSQ gives you HQ gear for one job as you level up, NPC's only sell the NQ versions, and HQ versions will be preferred by spiritbonders.
