Ifrit is still probably my favorite, the intro from Halatali hm, hullbreaker Isle and SV hm are nice too. they all have one thing in common I really like.

Ifrit from 1.0 was awesome, the fire effects just look so much better.

Edda and Avere's "wedding"

Diabolos has been one of my favorite Summons since the version got fleshed out in 3D in FFVIII (and they've pretty much been using that same model ever since).

Though he is merely regulated to a normal boss in this game his intro is still pretty awesome and exactly what I'd expect it to be.

Story mode Garuda was my hands down favorite. The transition from the cutscene to the battle was flawless. So badass.
