Monks should be be miles ahead of the competition in terms of DPS in Shiva EX...

Ice types are weak to both fighting and fire type attacks.

That's a lack of elemental damage from players in this game, yes. But all classes mechanics are based on this. So BLM can't use blizzard to regen mp since it will heal shiva.

lol good old memories...my first week on the game, playing BLM, that story quest Ifrit fight.....kept using ice spells on him because, well, it's Ifrit XD

even if there is still the old elemental wheel here, ice on Ifrit is wrong. Wind would be the right element.

fire -> ice -> wind -> fire
water -> earth -> lightning -> water

If you take the hit, you take more damage from the vulnerability debuff which makes it harder for the healers to keep everyone up.
Plus, if you're on the lower end of the gear level there, that can put you very iffy towards surviving some of the hits you have to take or put you into the "one mistake is fatal" range.
