Since the unhidden maps were released, I got so many fo them in total that I could have bought a Nutkin directly after selling maps for 170k~200k each, but I decided to meld my crafts for 3stars instead :>

Prices tend to be high when Supply is low, and hard to get a hold of, and Demand is high and everyone else wants one.
Good old fashioned Supply and Demand.
This more so than anything else really. It's not so much just a matter of supply and demand, but much rather just a matter of nothing else really to spend gil on in this game.
People have a tendency of complaining about the recent gil sinks (personal rooms, personal housing), however do tend to forget that the influx of gil into the game has drastically increased over the last year. Where first you had to struggle to obtain 100k gil as new currency into the market (low gil mob drops, items vendoring to NPC's for next to nill, etc) you can now get a 100k gil as new currency easily. In particular thanks to increased gil drops, challenge logs, etc. Consequently, gil is piling up.
Sure many players would come to claim that they're broke as hell due to marketboard prices and all. But just a small fraction of that gil actually leaves the game. To those players set on selling produce on the market boards the rate of incoming gil is ever increasing. Quickly turning a sum of 5 million gil into little more than pocket change.
And without further gil sinks, this is going to increase only even further. You may think 7 million for a pet is a lot right now. But give it another year and such pets may go for 20 million. Two years, and you may be talking about 50 million. Just your regular insane MMO inflation due to new gil being magically created out of thin air in a much higher rate than it being withdrawn out of the economy again.
At least there is one item that is not overly common.
Even the rare bluebird is uncommon at best. We need more items in this game to help toons stand out more.
Please add more minions that are this rare SE
only one on cerberus is currently 15m.
Apparently the rule is that useful gear is easy to obtain while useless vanity stuff is almost impossible to get.
Not particularly true. However most useful, limited gear cannot be traded. As it are drops from encounters. So rather than buying the item, players would have to buy runs in the encounter. Practise which is commonly done, and some players are willing to spend a good deal of money on this. Tens of millions are not out of the question.
