I did many FATEs, but never a FATE where you need to protect chocobos, feed them if they are hurt and comfort them if they are in panic while moving from A to B.
What we have are ordinary NPC escort FATEs.

Attack on High-Bridge and several FATEs in Coerthas, Black Shroud, Thanalan AND La Noscea involve escorting chocobos. That was the replacement as they discussed in the live letter

As for an ACTUAL re-iteration of Hamlet Defence, the only current plans are from the original documentation for the "Battle for Ishgard : Involving all Disciples"
These are not true Chocobo Escort's though.. They do not have a separate Achievement based for Escorting chocobos. as The person stated above you, you're not required to take care of the chocobos based on their status as you escort them.
The Chocobos are also not attack-able by mobs.

ETA on Chocobo Mask is what I'm wondering and I hope it doesn't trail off again.
I'm aware of how Chocobo Escorts worked in 1.23, as well as Hamlet Defense*. I did enough to make my face fold inside of itself on a daily basis.
However I didn't say they re-implemented it into ARR "as it was before", as is the case with Hamlet Defense/Chocobo Escorts currently. Anytime we inquired for their return we were completely ignored for the most part, or we were told they'd be utilizing the new FATE system for previous open world content instead (hence why Behests are gone now too).
Sadly we never got a true Chocobo Escort System or Hamlet Defense, but the stripped down FATE versions you can find in several locations throughout the world.
It's just a stripped down version of what it used to be that was slapped into a FATE.

I'm not condoning the actions that SE took or saying "This is the original content" it's stripped down from what it used to be to utilize the FATE system, with no certainty that it'll ever return as it was before.
*That being said, Hamlet Defence wasn't really open world content, but they still did away with it for FATEs.
