Mine is named Siegfreid. In memory of a character of mine from another MMO. I like collecting the bardings for the choco, so I don't see myself using other mounts as much as I use him. I mainly play summoner, and even though I don't need him on most fights, I use him often enough so that he gets experience. Currently Rank 9.
Mine is called Defteros, I named him after the Gemini Saint in Saint Seiya: Lost Canvas

I use it all the time; I'm now in the process of getting my first Thavnairian Onion, can't wait to get the XP from the challenge log at rank 11! ^^
Mine is Falcor (Neverending story) but I mostly use my 1.0 Choco. All that crap he went through to find me, I'll make sure its not for no reason. Love his charred feathers and armor and tattoo.
I have three characters that have their GC chocobos. Their names are as follows:
Kharble - Named after a fellow Exalted player that I've known for nearly a decade. Not used often, unless I'm leveling him, because I prefer my coeurl.
Creos - Named after a fellow Exalted player's (not Kharble) now-deceased Dragon-Blooded. Used moderately, for awhile I was solely using the Ahriman mount.
Veran - Named after the (perceived) antagonist from Oracle of Ages. Currently used solely out of the five mounts I do have on this character.
Ghishlain, named after my Galka WHM in XI :)

Always summoned whenever I'm doing any fighting in the open world.
Mine's called Kalameet because it was my favorite boss in DKS.
I don't have any screen of him but hes rocking a DRG barding.
