you can rename your chocobo at a chocobo NPC in the cities.
Honestly, though, do you think players in this game would have the patience for chocobo raising like what's found in XI? Or the emotional maturity? Seriously, I was an early adopter with XI's chocobo raising and late in raising my first bird I took a month off. When I renewed a month later my chocobo was in such a terrible state I hated myself for weeks. Took a month to get her back up to good health only to be hit a second time by mandatory chocobo retirement. Made me so sad...
That system was odd and I seriously doubt they'd adopt a very similar one here. I remember being exceedingly diligent raising my first chocobo, he even turned out red like I wanted! Then came the madatory retirement and his stats weren't nearly high enough. Then I realized that they had created a system where you could only raise worthwhile birds in the 2nd (if you're lucky) or later generations. Without question your first bird would be inferior to a rental chocobo in speed (nevermind the other race/ digging specific stats).
My method of naming pets or animals has always been to name them after what you last ate or drank. Skittles seemed like the perfect name for my WHM chocobo. But I've seen things like Burrito, Chowder, Mediumrare, and of course every variation of chicken recipe out there.
What did you eat or drink last? Would it work for a chocobo name?
Off the top of my head I remember it being:
Chocobos are supplied to Eorzea by Ishgardian breeders, wanting to protect their trade - they supply us with only male Chocobos.
Every adventurers Chocobo is a Male.
As for moogle gifts mounts - I am not 100% how they have female Chocobos... I think the Elezen there were originally from Ishgard too

You can still call your chocobo "she". When I walk my dog most people already call him a "her" before even hearing his name. Even with his non-girly collar....
If you read the chocobo mount entry in-game, it states lalafell ride jennets which is used in term of either a female donkey or a small spanish horse. Unless Spain exists, then the ones lalafell ride are female donkey-type chocobo.
Additionally, race chocobo can be male or female, you choose the gender ticket upon getting the quest.
