I could totally see there being a Magitek Fighter class. Or Armor somewhere in the future at least. And I'd love to wear armor like that. Livia looked cool.

That's highly unlikely, given the fact that magitek is simply a utilization of cereuleum (processed aether), to compensate for true-blooded Garleans' natural inability for magic. Meaning it's just Garlemald's stand in for magic to allow it to face magically advanced nations/threats (like the Primals) on more equal terms.
Also advanced weaponry (read, gunblades) in the Garlean military is reserved for a privileged few (the officers like Gaius and his Tribuni, and elite troops like centurions) - the regular rank and file grunts who make up the bulk of Garlemald's army are actually people from conquered cities and wield more primitive weapons no different to what Eorzeans already wield like bows and spears.
Besides, you get a Imperial soldier's armour already as part of the storyline, and it's pretty crappy to be honest (I mean, it's level 1 gear!). But I digress...
Most of your questions is likely to end with "Yes" only the matter of time. They are kindda generic and what to be expected from current story line.
Although I don't expect it for the expansion I hope they give us the Garlean Empire. It would be epic and a whole new side to the game, potentially doubling the amount of content. I would even re-level the equivalent classes on that side just to see the story and have that character.
Also PVP could be infinitely more meaningful.
In 3.0 Cid will craft a new ship that will be able to land on others planets, there we will travel to the others Final Fantasy mapmonde and i hope to go on the FFVIII one because the train there is really working and their airship BGU could lead to a free company housing, we're gonna also have Ultimecia as a boss (and as we defeated bahamuth in 2.9 we start again with bahamuth zero is grand brother in the hidden lab) and there will be glamour available for her dress.
