It's a FF thing, like theres alwyas moogles and chocbos and a Cid in every game, ff tactics advance and ff XII dont seem to be linked in anyway but the world and races are the same

Female Roegadyn are strong, tall women. The Admiral of Limsa Lominsa is a female Roegadyn. Yoshida has stated that the plan is to have male Mi'qote and female Roegadyn playable in time for PS3 launch (not just in the game, as again, female Roegadyn already are.)
There has been no talk of female highlanders as far as I am aware. The highlander was an answer to western gamers wanting a more "manly" human option, it's unlikely there are plans to create a female version, but we can hope?
FFXI did feature male mithra, in the form of an NPC and various mentions of others from far away nations. The idea in FFXI was that mithra were essentially a female dominated race, where male births were infrequent, and often became important peoples due to their rarity. (Most likely inspired by greater cat societies such as Lions)
On the other hand, Galkas reproduced through reincarnation, and though they were commonly referred to as males, were a-sexual. The point is, that was FFXI, this is not. We can continue to enjoy the world of FFXI and its characters, but FFXIV is a different game, I don't think more variety for players is a bad thing at all.
