Pretty much, except piety. Have to have enough pie to make it through the fight.
The Daystar and Allagan gear no longer have it on every piece. That makes non-pie weapons at i100/110 a bit less desirable.

No, but there's piety on every slot at the highest ilvl, so there's no point in, say, using crafted to get more piety, because you WOULDN'T get more piety.
The only real option we have to sacrifice mind for piety is in stat allocation, and a 1 to 1 swap mind for piety is no thanks.
Not usually, but if you just pick the highest ilvl you've got you could find you don't have enough pie anymore. For example: If you went full daystar because you've had no allagan drops you'd probably be in mana-trouble all the time.
Sort of like with accuracy. Plenty of people had/have to forgo ilvl for accuracy before they've gotten the drops they want.
If you're trying to think in best-in-slot terms you've never sacrifice mind for piety. But BiS sort of ignores the reality that you don't just magically get all the things you want right away.

You are correct in that there are several i110 options with no Piety; what I meant to say is that in every equipment slot there is at least one ilevel 110 (115 for weapon) piece with Piety on it. Thus there is no real way to trade away Mind to get Piety on equipment; the i110 pieces with Piety are have the same amount of Mind as those without, and more Piety than any other option. You can potentially (depending on armor slot) trade Determination, Spell Speed, or Crit for Piety on equipment; the only way to trade Mind for Piety at equivalent gear levels is with stat allocation points.
