In Final Fantasy games, what have you ever needed Gil for by endgame? Gil Toss ability. That's it.
Highly doubt Samurai will be getting that in XIV, so Gil is worthless outside vanity and mid-levels.

i buy shards. i spend alot of time progressing my battle classes, running coil, helping fc people and strangers with runs, and then with any spare time i gather and craft. because shards aren't really helping me level my gathers at all, i prefer to buy them and save my gather time for materials. i also buy materials that i might need large quantities of, or can't gather yet.
long story short......i pay for convenience.
Just goes to show how lazy gamers are these days that they resort to rmting even when everything can be obtained easily.
I assume:
Too lazy to make food.
Buy gear.
Buy runs.
Buy crafting supplies.
You are simply incorrect that crafted gear is not better than DL. Pretty much ALL crafted gear is better than DL lol... Some crafted accessories are even better than ilvl90 ones. People who think Gil is worthless are generally those who have no idea how to gear appropriately.
extreme fights
I spend my gil from dailies and HMs on HQ items. Then I use them as turn ins for leves. Went from 35 crp to whatever I'm at now. I think leatherwork will be next.
It makes leveling a crafting faster. I also used it to buy hq ilv 70 gear and accessories to use as an intermediate till I get full myth gear.
Also once golden saucers/ casino it should make it easier.
To save up for a rainy day. Never know when you might need that much money (like when FC housing prices were announced).
Food and repairs.
