Duo with chocobos is definitely doable. Used to do it with 3 man it all the time without chocobos. Haven't done it recently because it is just better gil to get a full 8 man party.
4 is the best bet. Although 3 is possible, the Adman Tortoise one and the Morbol mobs is kinda pushing it. Now that the mobs are hard, rather the debluffs.
for those mentioning low-manning these, a mate (sch) and myself (war) have managed to duo about 30 of these maps (using chocobos in attacker stance), the hardest one being the morbols due to their awkward positioning for bad breath hitting the chocos etc. When we first started as WHM + WAR we got the chimera and cleared it with 3 seconds remaining, with SCH + WAR we cleared it with just over a minute remaining. Gear seems to play a big part in it (though my WAR only had DL/CT gear and NQ Bravura).
As for solo, there are a couple which imo would definately be possible, firstly the alpha basilisk (because he is a complete joke), second the one that spawns 3 waves, first wave being 3 ghosts, then 5 ghosts (i think?), and then 3 more mobs. The other soloable one in my opinion is the dragon (has the same model as first boss in stone vigil), he always felt pretty weak, i think he spawns some gargoyles though, but can't remember. As for job, I think either SMN or SCH would have best chance for soloing them. WHM could possibly do it, but the MP cost on holy isn't efficient over that long of a fight when dealing with adds, whereas bane destroys them. Just make sure you have a good chocobo (rank 6+ in a specific tree helps), and attacker chocobo in my opinion is best for these fights due to the time limits.
Some are definitely possible to beat with just one character and a chocobo.
All are doable with 2 people although some require certain setups and/or strategies. The hardest one is the Chimera (he hits like a truck and there are two waves of adds that do quite a bit of damage and status effects). We do it as SCH and BRD with a DPS and a healer chocobo.
Our Chimera-strategy with BRD and SCH: DPS the Chimera till the first wave of 2 adds spawns. SCH heals if necessary, BRD dodges all of the Chimeras moves. As soon as the adds spawn the BRD will focus damage on one of them while the SCH kites the other one with DoTs and the damage Shadow Flare does initially. Place your fairy properly (!) so it doesn't get hurt by that big AoE circle the adds love to spam.
It's crucial that the fairy doesn't get enmity from the adds since you'll need Swiftcast for the second wave of adds later on and you can't afford to waste it on resummoning her.
After the first add dies the second add gets focused by the BRD. After that continue DPSing the chimera until the snakes spawn. immediately the SCH uses Swiftcast + Shadow Flare to get the adds attention. You don't want them to kill your fairy. Kite the adds in relatively large circles (don't forget about Sprint). You don't want to get paralyzed nor do you want to get heavily damaged. You won't have time to heal yourself until the Chimera dies. Keep your Aetherflow stacks to heal the BRD with Lustrate whenever necessary while kiting. The BRD uses all DPS CDs to finish the Chimera ASAP. After the Chimera dies finish off the snakes.
My SCH is only ilvl 71. It might be quite a bit easier with better gear. The chocobos aren't that good either (level 4 and 3), but they are still a huge help. It's always quite a struggle to beat this fight. Especially in regions with bothersome adds. The time limit is the biggest issue.
Morbol strategy works pretty similar to this. Third hardest fight is the tortoise battle with the slime adds (again: kiting as SCH with Shadow Flare, keeping your fairy from harm is the way to beat this fight), but compared to the other two it's not really difficult. All other Peisteskin battles are pretty easy to duo and some are even possible solo.
Why bother doing it with only two people or even solo? Well... some pretty nasty experiences with greedy people that don't bother to follow preset rules. It's better to do it with people you trust.
Been doing Peiste maps duo (WHM+BRD) with chocobos.
The only one that I'm uncertain is duoable (with my setup) with chocobo is the Chimera one, which can easily wipe out a trio depending on players...
Some seems to be soloable, but I'd rather not waste a map to try to get a mob that is soloable.
I can easily do the pieste maps in a 3 man composition healer tank dps with at least 2 minutes to spare on all the mobs even chimera. It probably is possible to do it as two given you have a good DPS tagged along with a good smn or a good healer who is doing also doing dps with summoner. The dps is really not hard, it's just mobs like chimera really need something to tank it.
I soloed one as a blm. It was three eye flying things plus two cyclops. Everything was sleepable. Only had to fight one mob at a time. Full ilvl 90 helps. This is the map I've done and don't know it is representative of all of them.
I think there are one or two that could probably be solo'd with a chocobo out. A few can be duo'd, depending on the jobs/gear of the two. All that I have seen can be trio'd with relative ease. I regularly trio these with me (ilvl79 WAR), my WHM friend (ilvl81 I think), and my BLM friend (ilvl75ish). Nothing has given us trouble except the Chimera once, and only because I wasn't paying attention, so the adds ended up pummeling the BLM to death. So without derps, all maps are trio'd with ease. We also have our chocobos out in attacker stance, but I'm nearly positive that we could do without.
