I understand your concern, Cairdeas. I won't panic yet, because we still don't know all the details on how SE is going to handle implementing jobs. But if they don't go about this carefully, it could lock out future possibilities and upset a lot of people.
This right here is the biggest thing that concerns me. I took up Conjurer because I wanted to be a healer. I want to be a WHM with the new job system. But right now, CON/THM are the two biggest hybrid classes in this game. I have no idea how they're going to handle this, so, this is one reason I've stopped leveling CON for now.
I have said from the beginning that Weapon=Class was a bad idea. Classes should have been classes on their own not weapon specialisations. Weapons should then been just part of your equipment that you skill up on and unlock unique weapon skills on that is it.
Classes should have been Jobs from the very start and housed their own skills and abilities that you gained as you ranked up and not defined by the weapon. Sure certain weapons types would be better than others for certain classes but at least I could be a Lance wielding GLA if I choose for certain situations.
I really hope that SE has something planned to address this as I don't want to find out something like MRD unlocks DRK and then I am tied to a G.Axe on DRK forever as that is ridiculous.
In response to the OP's list:
1. There is no reason why a thief like class cannot be implemented in the future that uses dirks, or knives, or some other weapon entirely. You argue that jobs should not be tied to weapons but then claim that thief is impossible because the only feasible weapon for a thief is a dagger. This seems contradictory.
2. XIV has always been based on the idea of weapon specialization. This is not new, it shouldn't be to you, and expecting them to change that focus can result in no less than disappointment.
3. You have no basis to make this claim at all as discussed in 1.
I'll just say we'll have to wait and see. I hope there are more options too.
