Not really. MB lists by most recent first in those cases, so the last one to add theirs would be the first sold, in the most likelihood.

Yeah, when someone undercuts me by 1 I try to match them. If they do it again, I'll probably match again because I think it's silly to lower the price like that. If they do it AGAIN, I'll decide to take much more drastic measures depending on what I can do about it- which of course depends on what the market looks like (if things sell fast or not, if I can get them to undercut larger cuts so I can buy them out, etc). I do take city state into account though, sometimes it's 1 gil undercut but my retainer is in a better location so I'll wait and see what happens (some buyers pay attention to tax rates lol).
1 gil undercutting every 30 minutes, which I've seen, is the most annoying thing I've seen. If you think the price is unfair then just set it to what you think is fair lol. Can be made worse when it's a fast selling item but everyone is posting together in a trail of items 1 gil off from each other, if it's fast enough and lots of people went under market price you can buy it all and put it back up XD.
Another consideration to listing the same amount as the lowest price is also trying to do so in a way where the retainer(s) doing the selling are from different market locations. If a buyer is smart, they'll look for a listing from a retainer in their MB's location to avoid the taxes. Sometimes this works to your favor, and sometimes not. That's the way things go of course, but I still think it's an important thing to remember.
As annoying as 1 gil undercuts are, there is nothing wrong with it. There's no rule, this doesn't make them bad people. The 1 gil undercutters just have to be okay with the way the rest of the AH deals with them.
I would agree with you but after the whole "cross-server" implamintaion.. the only real city to sell in is Limsa.. it's just the "MOST" convenient location to sell and to quickly check on prices.. so when someone comes over form another server they are probably using the Limsa city jumping from server to server real quick to check prices.
If we do have the exact same price whoever has Limsa as their selling city will get the sell most likely.
Rarity of items = higher price
The higher the demand means more people are gonna be selling them which means prices compete and crash and the items become less rare because more are being sold
It wasn't this bad till they added cross world system. When SB launched all the new gear sold for double what it does now. Crafters not only compete with their own server but other servers now. You need to visit every other world on your datacenter before posting items then only to be undercut 5 minutes later.
Desynthing is the culprit. Giving everyone the capability to desynth everything has crashed the market on what were once semi valuable mats. Cheap mats mean cheaper items crafted from said mats.
