Doubt we'll get flight units as a mount. Plus while they look nice flying, they wouldn't look so well in non-flight regions.
We already have hovering mounts that essentially fly along the ground when walking, so this would work just fine even if walking. The animation couldn't be any worse than the car is at any rate which just awkwardly pivots around a central point when turning, cresting hills, and goes through troughs instead of having the wheels be the points of contact. At least with a hovering mount that awkwardness would be lessened a bit since there's no contact points.
That said, I have no clue if that type of mount where it completely surrounds the player would be a technical possibility in FFXIV. There'd need to be a completely new animation and sitting pose (superman pose technically) added to the game at the very least since all current mounts just use one of a handful of pre-made sitting animations, none of which would work with that animation at all.
The o12s mount completely surrounds the player while flying, so the type of mount can, and does, exist. So this mount would be entirely possible.

Ah, didn't know it did that. Looks like they just did a basic scaling of the sitting PC (it literally looks like a simple reduction in the x, y and z dimensions with no actual animation of the character) and then made it invisible which isn't quite the same thing as the animation in the linked video for the nier flight suit. It's also kind of a lazy approach imo, but it does work. If they incorporated the nier mount as in that video they would likely have to make it look like that which would be more involved than the o12s mount since I suspect they'd want to keep the nier franchise's asset faithful. It's good to know they can turn off the display of the character model, though. That's one step in the right direction.
The simple fact that they exist at all in the game means that it is possible in my opinion.

And it wasn't just a one and done thing either. 2P and 9S suited up multiple times during the raid. Whether the devs see it as being worth their time or not to make them player mounts is probably a whole other story. I don't think our mounted speed will have much to do with it though. It will probably just come down to player demand or lack thereof, and/or a willingness to follow through on said demand.
