I'm probably wrong or it changed, but I read something and was told that they were sort of expert versions of current jobs, like pld is gladiators expert job, and instead of leveling paladin, there was a series of quests based upon your gladiator level you unlock to give you the skills and such of the paladin. Has that changed? or more information on how it works?

... but in answer to your question,
There will be quests at Level 30+ that unlock a job specific to each class.
Class --> Job
You can play as either the class or its job,
but the class is more rounded for solo play, for example, as a battle class, you can still heal.
But by playing as that class' job, you lock out some abilities from other classes like the heal spells,
but gain more abilities specific to that jobs role that you could not use playing as a class.
Thus,
Class = Solo
Job = Party
