I have seen the new cobalt set and thought that would be cool to craft for DOW but what is the crafting equivalent for CNJ/THM? I haven't found a cool crafting set for them.

I would think it's Felt, but I'm not too sure.
Yup felt is the equivalent.
The highest craftable mage gear is the Felt Bliaud, Cavalier's Hat, and Gaskins from weaver. Ideally I believe you'd want an elemental Boarskin Ringband from LTW and GSM, as well as some of the new pattens, mahogany maybe? from CRP. I haven't looked into belts yet.
