Dead Aim does not seem to currently affect critical hits on ranged weaponskills such as Arching Arrow. I tested this in Ronfaure against targets where ranged damage is completely capped and will do the same damage on every shot unless it crits (which before the update would do 25% more damage) This was done with a Hume 90RNG/45SAM with no gear but a Short Bow +1 and Wooden Arrows and 5 STR merits. All tests were performed at point blank to eliminate any variance from True Shot. Normals shot did 81 every time with critical hits landing for 141, an increase to 75% extra damage. Arching Arrow on the other hand would normally hit for 576 but would only critically hit for 720, a 25% increase the same as before the update. If Dead Aim was working with it, it should have critically hit for 1008 damage with a 75% damage bonus.
