The single-skill limits were introduced originally so players could specialise. We're well past the need for that now.

Well I think it would help more then harm. I mean they did it for 14 why not 11?
Because they're different games and just because something works for one doesn't mean it works for both.
Also, FFXIV does have specializations but the impact of them was diminished a while back. You can choose three DoH classes to turn into "jobs" and you gain an additional action or two that helps with crafting for those crafts. It used to do a lot more but now its just kind of a little bonus.
Desynthesis also still has a limited number of skill points you can earn, just like FFXI.

Ok but I just want all 8 shields on 1 char. I don't think that should be too much to ask at this point.

Hard agree. If SquareEnix wants to add things that takes an unreasonable amount of time like crafting shields and prime weapons. Give us the option to make all the shields as a way of keeping us occupied while building the next end game content to keep us subscribed.
If you consider making all of the massive grinds in the game to be "content," frankly there are a lot of better games for that lol
Take any Warriors game for example. all of these games are massive grinds but its an action oriented grind. Certainly more interesting than the crafter shield process.
Limits are as much a part of good game design as anything else. The rules and restrictions define the play environment. It's easy to just say "give us everything" or "more options please" but I don't think people really consider the reasons why the rules exist in the first place or in other cases the implementation considerations.
