This is the most correct answer if you're looking at outside world monsters.
Otherwise, as said by Zachery, you can try your luck at Incursion, basically a monster meatgrinder of which you can level the content up the more you do it and thereby make it more challenging.
Apart from that, you can always try to throw unconventional setups at things.

I checked out those areas and you were right and I finally found some monsters that weren't easy prey.
It's just strange to me that there is no in-between. Everything seems to be easy prey or very/incredibly tough. Why no decent, even, or toughs anymore?
Luckily this game has trusts now (which is one of the cooler additions) so I have been able to manage the very/incredibly toughs even when solo. Thanks for pointing me to them. Appreciate it.
It's nice to fight something that actually makes me want to use my spells so I can get some skill ups, rather enemies I can auto attack to death while in the rest room.
