Well there actually are many stories in FFXI. Its not the norm in the FF series. When you start out in a specific nation you will be doing your nations missions which eventually will fold into a central main storyline involving all other nations. To get to that point you need to speak to gate guards near exits to the cities. they will give you missions that will be specific to your nations needs. also FFXIwiki has a lot of info for you.

Missions are the main storyline of the core game and expansions. Some quests tie into missions, and some quests are their own storylines. There is a Mission chain for each of the starting cities (you can switch home nation when no missions are active to do one of the other chains on the same character, and can be Rank 10 in all 3 nations), and one for each expansion.

You can also try talking to one of either Alaune (Southern San d'Oria, G-10), Gulldago (Bastok Markets, D-11) or Selele (Windurst Woods, K-10), who explain things like weapon skills and skillchains (among other things).

Unless you are a blue Mage or samurai you normally can not self skill chain so you will need one other person to make one happen. They're made by you and someone else using the correct combo of weapon skills that result in said skill chain. Takes timing and practice. The skill chain can be then magic bursted by a mage who casts a spell that goes with the element(s) of the skill chain made on the monster targeted. Depending on the spell used it can cause a lot of damage or have the debuff not be resisted.
