Do not worry too much about the age of the guides you are finding. A lot of those means of skilling up are just as relevant today.

Personally, I did cooking (I have it at the mid 90s now) and I thoroughly enjoyed it. Cooking, along with Alchemy and some parts of Woodworking involve making consumable items, so there will always be some level of demand for your products.

cooking is an easy one to skillup...you can get it to the 50's fairly steady just making items you would want to use on a regular basis. Same can kind of go for WW, GS, and Smith too if you use ranged attacks (depending what ammo you need). If you plan to use NIN a lot and want to make your own tools, you can get several other crafts up to the 30's making tools for that as well. Will have to make your way through some fodder synths along the way to the 20's on many crafts that may cause some loss of gil, but for the most part it can be self sustaining and become profitable in the end if you are making popular consumables. The trick sometimes is to make a profitable item in one craft (like a cheap NIN tool, ingots or other items used to make ranged ammo) to support the losses in another craft. Browse the AH site by recipes and ranks and you'll see a few items that really stand out that you can use to support your efforts along the way.

And that's the best reason to learn a craft. Does it make your game more enjoyable? Do it.

BSTs make excellent cooks for just that reason. It's nice being at the top of your game and being able to crank out some Dawn Mulsum when you need it, right?
