I'm going to jump on the "I want to be able to convert this to this" bandwagon and say; I want to be able to convert battle trophies into dominion notes.

But you created the bandwagon!
I think that regardless of how many things SE gives us to merit (even if they don't cap categories that don't need caps) we'll still eventually cap them. I suggest that to remedy this, we should be able to convert Merits to something else. Some form of currency would be nice, even if it is gil, but Beastmen's Seals or something like that would work too. Or it could work with one of the newer things they are doing like points for the daily reward system.
A few ideas of things that merit points could be transferred into (ratios subject to SE's judgement, and some items could cost more then one merit):
- Gil
- Conquest Points
- Imperial Standing
- Allied Notes
- Cruor
- Beastmen's Seals / Kindred's Seals / Kindred's Crests / High Kindred's Crests
- Dominion Notes
- Daily Reward Points
- Traverser Stones
- Ancient Beast Coins
- Ancient Currency
- Alexandrite
Of course, some of these things might not be suitable, but these are just suggestions.
Off topic, I want to convert Tarutaru into my dinner.
Twelve crystals should be convertible into a cluster for no cost. Make it a level 1 alchemy recipe with no item loss or HQ chance, which requires a crystal of the respective element, and eleven more as the ingredients, or alternatively, make the city who won conquest that week have an NPC who does it for free, or at worst, after a quest.

Things I've seen that have been good idea in other threads are items like converting void stones into dust. It makes sense. Why can't we just grind them up? Merits into anything. I for one have nothing left to spend them on until the update and then I'll very quickly not have anything to spend them on again. Crystals? People have been wanting to covert those to clusters for the last 8 years. On that note, I'd like to convert all galka to Hare Krishna.
I want to convert HP into MP!
Oh wait...
As monk, I want to convert some of that useless M P into dmg, some of my useless H P into T P and extra T P also into M P. Any questions?

dyna curencies into other dyna curencies
Knowing SE, they'll just make it so that you need to trade 2 for 1 and it'd be completely pointless.
Throwing in that I think tabs should be allowed to be turned into rudimentary gear for newbies. A huge problem facing a lot of newer players is that they get to 75 very quickly but have pretty much no gil for gear. Upgrading from 30 inventory slots to 80 costs something around 500k if you get all the things off the auction house. Getting scrolls costs plenty.
Obviously it shouldn't be nice stuff like Hauby and such, but having played around with the FFXI trial account a bit I can say that the prices on the auction house are certainly not skewed in a newer player's favor, at all.
That, or rework the augment system a little, since it's all but useless now.
