They can't look at what the monster lootpools are. However, some of the items are pretty obvious what mobs drop them, as the names are in the item names. Akupara shell, for instance, comes from the mob Akupara, which is the name of a giant tortoise that carries the world on its back. It's certainly in the adamantoise family, probably the Lacovie model.
