The Feretory is unrelated to Adoulin, while Mog Gardens are actually in the Adoulin Archipelago, right off the coast of the city of Adoulin. They're provided to pioneers for their service to Adoulin. It's a little late story-wise for Mog Gardens to be available without the expansion.

You don't. I told my assistants once to increase the yield of my furrows (in order to try to get to rank 5) and I left them like that, they continued to increase the yield over successive gatherings without having to be told again. Even after their contract expired and I had to rehire them, they still kept doing the same thing as before, without having to be told again.

The assistants will keep doing the same thing until told otherwise, even if they expire and are rehired.
