Far too lazy to do the original versions. I actually recently picked up the PSP versions of FFI and FFII for that fact.
Never finished the first disc of FFVII, but got close. Would not consider it the best game.
X-2 > VIII

I'd probably recommend the original versions of the most early ones only if they had nostalgic value to you, or if you really wanted to play them as they were.
The first one for example has a frequency of random-battles that is just brutal. The PlayStation re-makes of 1 and 2 also have re-mixed music that I simply love. And there are some other additional tweaks that make the experience a lot more enjoyable altogether.
That said, Nobuo Uematsu has been a big influence and inspiration to me, as a musician, ever since I first started playing these games nearly 20 years ago. It's really the main point for me to like the games all in all. IX sort of is the last Final Fantasy to me, after that, they're good as games, but not Final Fantasy, and not nearly as enjoyable to me. And XI is obviously a whole different thing altogether.
Maybe I'm just getting old that way...
What I like about IX is how it seemingly plays homage to the older ones. The battle system, the equipment system, and even the music that has some pieces from the very first game! I get the chills from just thinking about that.
As for completing those first, and then the others, I don't think you should be worrying about playing them again when you get to that number, since they basically are considered games of their own really, and not sequels. No point in that really if the games are still in your recent memory, I think.
I don't really know about the other re-makes than those that are for the PS. It saddens me that there is no such for the third game, since I have 1, 2, 4, 5, and 6 for the PS...
There are also some specific grudges against X, X-2, and XII because those had certain re-makes as well, but only released in Japan. And ironically they're called international, that makes me wonder if I should cry or laugh... so I just sigh quietly.
XII for one saw a lot of great changes, such as a kind of a job system (international zodiac job system). I like that version a lot more.
X-2... that reminds me; I still didn't watch The Spoony One's review, or should I say tearing on that, which he recently posted. Should be fun.
