The Magian Moogle should just let us choose our weapon and start at 1500 Metal plates trial like it once was before all we had to do where I came from was pick the weapon and provide 1500 Metal Plates and it gave us first upgrade straight to that form from the very most original version of the weapon before the first 3 Notorious monster elimination trial.

Not sure where you came from, but here on retail FFXI, the notorious monsters have always been, like, the main part of the Empyrean weapon process. If you could just skip straight to the "throw gil at it" stage, it wouldn't be much of a trial any more, would it? Final Fantasy XI is kind of all about putting in a lot of time for things; if that's not what you're into, maybe this isn't the Final Fantasy MMO you want to be playing?

they're a returnee from quite some time ago as I recall; they've probably just gotten used to other games that aren't quite as grindy.

Admittedly, one reason things are this way is because they are only sometimes able to add new content, so these grinds are long to keep people busy during those content droughts.

There's only ~5 NMs (3-4 kills each), then 3 voidwalker NMs, that's not so bad. If SE removed that, what's the point of your leaving mog house?

The trials after that are to various NM drops in Abyssea (Empy Items) ...but you're basically advocating that SE just skip this too? Why would they do that?

If SE is just going to eliminate or reduce content, I hope that some new/interesting is going to be in it's place. So, as a result, I think your recommendation has a very low chance of happening.

There is one change I would like to see for empyrean weapon trials.
Voidwalker NMs outside abyssea should get the same 100% upgrade rate as those inside abyssea give.
Losing a t2 pop and having to re-farm it can take quite a while if you're unlucky.

One of the tricks I've read and have used is farm the T3 pops (all zones in case you want to build multiple weapons) and do your best to not use them. This way when it's time to farm the T2 NMs, it cannot upgrade since you have it already. There is a chance that you might get unlucky and pop the T3 on your first rest but guides have approximate locations for T2 NMs. I don't recall the T2 pops ever "breaking" like the higher ones.

That said, I feel the the T1 to T2 rate could be a bit better.

Since it's not so bad what's your point. Heavy Metal pieces take more than a year to grind out at times.

You can also do the pop and drop method: Get a partner to pop the VNM for you then leave the zone before you kill it. No risk of an abyssite upgrade if they're not around. It's a lot less setup than building all the T3s, but it's not an option if you're playing alone; also, there's the risk that you have to hunt your NM while the other one available in the zone is nipping at your heels because you managed to find that one first and you can't fight it without losing the abyssite, which is annoying.

I'm already aware of both tricks, but solo you'll still sometimes screw up and pop the T3 followed by upgrading T2 to T3.
It's just a lack of consistency where abyssea you only need to kill a single T1 to upgrade vs outside you may need to kill 30 or more.
