It's stated that each race comes from a specific crystal, during CoP you are told to collect the power from each Ebon panel corresponding with your race

Ebon Panels

Mea (trust, negates chains of arrogance) = Elvaan
Dem (Justice, negates chains of envy) = Mithra
Holla (Courage, negates chains of cowardice) = Tarutaru
Vahzl (Hope, negates apathy) = Hume
Al'taieu (Compassion, negates rage) = Galka

Some of these don't make that much sense, temperance would be a better opposing rage surely, and justice should cancel apathy instead of hope. Given the names of the Sea NMs this is even more confusing (this is another thing never explained very well, and really should of been).

It's been accepted that the above tells us which race aligns with which crystal. However given where each race ended up, the above doesn't make that much sense. How did the mithra start around Konschat and end up in Elshimo? Did they swim to a new continent?

It should be like this:

Elvaan should be Holla
Human should be Dem
Tarutaru should be Mea (there is some wiggle room with the above 3 since they were constantly at war with each other, but far less so with the demi human races below)
Mithra should be Al'taieu (closest location to the mithra homeland)
Galka should be Vahzl (closest location to altepa on map)

Unless they were drawn to opposing crystals or something because of their failings I guess in some way

Has it ever actually been stated which crystal birthed which race or would the developers ever actually state this from the written lore they have.

This is a misconception. The mothercrystals didn't birth the five races, nor do they return to a specific crystal when they die, nor does Al'Taieu's unique situation give rise to the Galka's reincarnation.

One of the things FFXI does so well is propagate and suggest unreliable histories. It was easy to draw the conclusions above, because a number of things implied that it would (almost) fit.

However, if you consider the storyline of the Voracious Resurgence, you can see that the beastmen history is very different. Consider since ToAU we've known that Olduum existed contemporaneously to the Zilart in another part of the world.

Returning to the mothercrystals, it has always been odd that they refer to the five races and that the races are represented by the Ark Angels. It seems that now maybe our explanation is that the explosion didn't warp the beings of the land (Tonberries aside) and that Altana didn't 'weep five tears for the Zilart' (even if that was allegory) to create the five races.

I'm hoping that the Voracious Resurgence will give us even deeper insight into the true history of Vana'diel, as Rhapsodies did regards the true nature of Altana and Promathia.
