So 11:00 GMT is 7:00 AM EDT right?

the servers are on PDT, which is -8:00 GMT. EDT would be -5:00 GMT. since you are asking for eastern time, id assume you are an american, which they said theyd start them at 4 on the east coast, aka 7 for you.

With these energy saving measures in place, we will be able to bring our servers back online and restore service to FINAL FANTASY XIV, FINAL FANTASY XI, and PlayOnline on Mar. 25, 2011 4:00 (PDT).
Square-Enix uses a 24 hour clock, not a 12 hour clock, so them saying 4:00 is really 4AM.
