I am 83 NIN with Ninjutsu at 197 and Katana at 205.
Robber Crabs in Kuftal were barely giving me skill ups anymore, so I went to Boya tree to kill Mouriche and Moss Eaters but I'm barely getting anything here.
Any recommendations?

Are you sure 200 skill is high enough there?

Abyssea mobs like the worms in La Thiune but if you want a more gentler climb in your skill (if that's your thing) fight the crabs in the Bhoyada Tree then you can go to abyssea and hit the aforementioned worms a tad more comfortably
EDIT: Just keep in mind there are 3 tiers of crabs in the Tree. The 1st batch you run in are the lowest lvl the 2nd batch deeper in are higher lvl so you can skill even more from them and the 3rd batch are differently colored and are DC mobs for 99 players so def avoid the 3rd type (if you run into the 3rd type you ran way too far in).

Are you sure 200 skill is high enough there?Just use Razed Ruins and you should be fine, might need a tad bit of accuracy gear as well, but your level 83 which means you are at least using pink or better, thats a nice bit of acc, should do well. I leeched my Ninja up to 85 in cleaves my LS was doing, then skilled and leveled the rest of the way in worms, I went from about 150 Katana to 300 in worms in about a hour and a half.

Latheine worms can be fine. If people are fighting them and causing them to level up, it might get a bit hard to hit them. Your hit rate should be fine if you target the lowest possible level enemies you can find in there, though, so basically anything that isn't fought by someone else. Birds are pretty easy, and that's what I used to skill archery from 180 to 300 on rng.

So I tried worms, I didn't manage to hit anything with my katanas, but my ninjutsu went crazy. I think I'll try focusing katana on the second tier of crab which is just past the Elder Goobbues, then when I'm done there I'll work my ninjutsu on the worms :). Thanks for all the suggestions people :D

Well, i ate acc food while skilling, as well as using C&D and RR atmas. I guess it did have a bit of an impact that rng has like +48 acc from job traits.

If you have accuracy issues, you can try using atmas like Horned Beast and Cloak and Dagger to help you along. Try using sushi or skillup foods on top of that. I tend to find that if I can get high accuracy on high level monsters it's worth just sticking around them instead of finding level-appropriate monster through virtue of the time I save not traveling around every couple levels and needing to look up skill levels/camps.

Steelshells, Korrigans, and Elder Goobbues in The Boyahda Tree should get you to the level where you could much more comfortably do the rest in Abyssea. Or if you want to stay out of Abyssea entirely, once skillups slow on those, you could move to birds in Misareaux Coast, just outside Tavnazian Safehold. Those can bring you all the way up to the level 90 caps (354 for katana and ninjutsu), and they don't aggro or link.

pg 5 in the cape, the manticores there turn out skill ups very often from 220-250/60 before slowing to a crawl. I used to skill up 180-210 on crabs in the cape by the water just north of the op, then move north to the tunnel/book zone were the cockatoo and manticores are (were you drop off the ledge and cant get back up, its by the northeastern zone to the tunnel and theres a FOV book there)
Once you hit 250 head to a visions of abyssea area, probably worms in la thiene. Once skill ups there halt, head to vision zone, then lastly head to hero's zone and fight dc-even match.
