I've been thnking about getting Windows 7 and putting it on a partition of my MacBook through Boot Camp. 2 questions: How much space do I want to dedicate to Windows 7 and how much would I need to run FFXI effectively (I have the PS2 versions currently)? In addition, what controller would you recommend to closely replicate the DualShock controller?

A ps3 controller would probably work.
And just the c:/Windows folder on one of my work computers is 14GB.

The game itself is not programmed to run in a Boot Camp environment so there's not too much we can provide in support for that. The game, all in all can run around 21 GB I think with all the bells and whistles. Windows runs at 20+GB depending on your version of Windows 7 I believe. Keep in mind that any Windows installation will want as much extra room as it can get due to page file usage and fragmentation.
In regards to a controller, the game supports some old Logitech controllers as well as the XBOX 360 controller. If you're dying for a PlayStation 2 one you could always look for one of those wacky PS2 to USB converters and some drivers, though it's super-unsupported.

So I'm looking at YouTube videos on this and it seems to run smooth enough on a slightly older version of the MacBook with less RAM. The number I have in mind as far as partitioning is 60GB (I currently have 113GB in reserve) to insure against slowdown. The question that remains is how to get FFXI and whether my current PS2 purchase codes would work on the Windows version.

Your codes are saved to your account so all you need to do is put in your login info and everything should work fine.
As for Installing the game, if you don't mind paying for it again you can get this:
