I'm just wondering if anyone could be so kind as to point me in the direction of a website or maybe a strategy guide (an updated one) one could purchase that could help me understand how to get started? I own all of the expansions but I literally have no idea what I'm doing. Any info whatsoever will be greatly appreciated.

Perhaps the FFXI Wiki might help you a little.
It has a pretty comprehensive compendium of the majority of Missions/Quests/NPC/Equipment in the game, it's quite up-to-date, even though it is still missing some articles regarding the newest additions to the game. Either way, it's mostly what everyone uses, together with the FFXI ZAM.

As for strategies, just play the game, talk to the NPCs, jump into the "FF feeling", talk to random people, make friends and ask for advice.
Almost everything you need is handled in the actual game, even though, Wiki itself, offers some strategy suggestions for boss fights, missions and quests that might involve one.

For older basic stuff I'd use http://wiki.ffxiclopedia.org/wiki/Main_Page. For more recent stuff, including information about Abyssea, this site is better: http://wiki.bluegartr.com/. Hope that helps you some. :)
