Here's a few idea that pop to my mind and have bugged me for several years, feel free to add more if you want.
2handed weapons
Nunchaku: MNK, NIN
Chain&Sickle: NIN (like Hanzo Hattori in Samurai Warriors, if you don't get it)
Whip: BST, DNC
Double-Blade Sword: THF, BLU, DRG (like Zidane's)
Gunblade: COR (would require both weapon and bullets equipped, allowing you either /ra or /att option to deal different type of damage)
Can't think of any one-handed weapons atm but I'll add more if I can think of some.

Seriously though, why would nunchaku or whips be 2-handed? Picturing anyone 2-handing either of those brings hilariously funny mental pictures to mind.

while you might be right about whips, nunchakus often require both hands for most of their moves, unless you are Leylong I guess <.<

Rifles/Muskets would also be a welcomed addition for CORs. It never made sense to me that they have pistols but no type of rifle in Vana'diel. Hell, they even have hand cannons (RNG). Other than that, the gunblade idea is definently a winner, can't believe I never thought of that.
Regarding the nunchaku, they should be able to be dual wield or 2 handed, to be more accurate. You should also add PLD to the double-bladed sword jobs.
Rydia had a whip. So SMN gets whips as well.
Only as SMN/BLM or BLM/SMN
Gunblade made no sense in FFVIII and it does not make any sense in this game either. You can defend that its a fantasy setting all you want but the idea of the FF series was always to incorporate a fantasy and pseudo-scientific environment. Also PS2 limitations. Also FFVIII and subsequently each game after has been garbage.

VIII's concept and design was awesome and original. No more Derailing now.
Gunblades would be sweet. Dual wielding Gunblades would be sweeter. -drool-

Favorite Final Fantasy games: All of them (except 7 [sub-parenthesis: I guess 14 counts as well now]). That is all (no more derailing). Don't ask me why I don't like 7, it's simple, I found it impossible to care enough to go past disc 1, on multiple attempts at forcing myself to play it.
Edit: I do NOT even consider ffx-2 to be a final fantasy game, thus I cannot honestly say its one of my favorite final fantasy games, as it doesn't even count as one ^^; in my eyes.

I would think a Swallow type weapon (double-bladed) would be a great addition to THF.

Flails and morning star ball an chains fer pld~drks~mages, cat'O nine tails fer cors?(with their own line of ws's). im a drk lover myself id like to see one handed "short" sickles for those times drk/nin with a whole new line of inventive but possibly similar ws's, lets face it i love guillotine and spirral hell :) maybe something like: Ravage: 5 hit ws, damage crit varies with TP.

I would like to see the same idea with grips for 2handed weapons go for H2H, something like wrist bands to be put in the sub slot, that can enhance abilities or boost stats, it would make MNK, PUP and any job with natural h2h skill so much more enjoyable.

I'd like to see a Shuriken weapon skill for ninja. It only has to have the animation for it, maybe it could "count" as a Katana WS or something.

While trying not to go too nerd-core. I've always liked the idea of a 2-handed weapon for THF.
"Double sided pole-sword" type thing was always what made most sense. it is in itself a weapon that requires its use to be agile.
However, We're very unlikely to ever see new weapons in FFXI, as much as i'd absolutely want it.
Hammers! 2-handed ones. Nothing beats equipping a big hammer.

Yes they should add those weapons to FFXI.
And they should totally add Sephiroth too.
And have Nomura design armor sets from now on.
And change the name to Beltanzipper XI.

MONK: Allow staff to be more useful/powerful for MNK and change the Staff Wield Animation so it looks like they're not 5 years old trying to smash a pinata at their birthday.
GUNBLADES: A bit over the top IMO, but still not a bad idea with the ammo slot acting like virtue stones and whatnot.
MORE SHURIKEN FOR NIN: Just do it already.

Nunchucks remind me of how horrible weapons were for Monks in FF1. Cost/benefit of adding Nunchucks isn't very good, IMO.
The Kusarigama Chain-Sickle sounds neat, but probably has the same chance as whip, sadly, due to needing new animations.
I'm ambivalent on Gunblades; they somewhat fit the Corsair job (and wouldn't be terrible on Ranger), so I wouldn't mind seeing them in game. The whole bullets causing the blades to vibrate or release extra power on hits fits existing game mechanics of Virtue and Magnus stones. The melee aspect of the ranged jobs, when staying out of range isn't possible, would be nicely enhanced with this game mechanic, and they're already used to using ammo to enhance their damage.
Weapons I would like, but I am not expecting:
Fans: Shield-weapons for Dancer - could just be a new dagger type with +parry, augmenting defense dances etc.
Ninja Stars: (Yuffie) These are huge, windmill-style, returning shuriken. (one should be called the Death Star - you know SE loves Star Wars)
My list of anticipated potential weapon types would be:
#1 want (I'd be really happy if we only got this one added): Dual-ended Sword-Blade polearms
Zidane-FF9, Judge Gabranth-FF12, If not a new skill for "Glaives", it could be implemented as new graphic style of polearm for Dragoon, Thief and Samurai (yes, this would mean giving Thief polearm skill, but only having access to a few in this new style of polearm)
* I'd expect 2 variations: Glaives (Drg,Sam) and Swallows (Drg,Sam,Thf)
* Polearm animations and weaponskills already work for the Glaive graphically as well (no extra work).
Dice: (Setzer) For a unique thrown weapon Corsairs can use. (Certainly not a new skill category, just a variation)
Whips: (Rydia) Ranged weapon, lots of added effects for Beastmaster, Summoner, Dancer

SE always nixed the wanted section of AH due to "limitations".
They are not going to add new weapon classes more than likely for the same reasons.
Limits on money, time and memory.
