My girlfriend would like to get into FFXI, she has an xbox just like me.
My question is, Can I use my FFXI Disc to install it onto her Xbox 360? But then Buy the Ultimate Edition from Steam and use the Code to Register the FFXI, Expansions and Add-ons?
Then so she can load the game I'll give her my WoTG expansion disk?

Yes codes bought and registered for the PC edition of FFXI count towards what you have access to on the 360 content-wise as long as the appropriate expansions are installed (RoZ CoP ToAU and WotG) .

So even if i'm installing it using a used ffxi xbox 360 disk it will still work?

Yes it should work since content is tied to content IDs and registration codes and not the game discs themselves, outside of requiring the physical disc to install game data and to boot up POL of course.

Right then! When installing POL would I need a POL Code Whilest Installing?
Because awhile back my girlfriend had a ffxi account but we have forgotten the POL ID and the Codes :S

No you wont need a POL code while installing i didn't come across that when i got myself started on the 360. If anything you would simply:
1. install POL and the game on the 360
2.make her a new account since her old one most likely would have been erased by SE as they are prone to do on inactive accounts
3. link the account with her gamer tag
4.log onto SE's FFXI website on your PC's web browser since you can only manage your account from there now (things like applying registration codes or adding alts to your account)

this may require her to transfer her her account completely to SE's new account system which shouldn't be too bad with the new and forthcoming revisions to their payment options.
5. At this point she should be all set.
Take what I say with a grain of salt i'm far from an expert on this stuff.
