Your story line will eventually take you to meet a goblin outside Ul'dah that will teach you about materia. I can't remember if it's your combat trainer or a story quest. I was sent to spot where the afore mentioned goblin is as a carpenter (highest level class I had at the time) but spoke to a different person near the goblin.

An L19 Main Story quest will send you to the goblin that teaches about materia.
Spiritbond accumulates whenever you gain XP while wearing the gear (not sure if quest rewards count, probably not). In essence, you have to use the gear for a while. Then you can convert it to materia which can be attached to craftable gear to boost its stats.
...and don't you have to have a craft leveled to 19 or 20 in order to Create Materia and then also be able to Meld it??? Can't remember now.
You only need a crafting class if you want to attach materia to your gear yourself. You can have other players attach gear for you by right clicking them or hitting the square button on the gamepad and selecting "Request Meld".
Any class can convert gear into materia.
